We steam cook them, we also cook steam-cooked plantain pieces in melted jaggery so it takes on a caramelised taste.<br />Then we convert them into a sort of jam, make halva, stuff them with coconut-cardamom-sugar mixture and pan fry them.... This dish reminds me of bananas tempura, here in the DR ripe plantains are usually sliced in half, then cut lenghtwise in 1/2cm inch slices and deep fried with no batter or coating whatsoever OR made into "maduros al caldero".
