Boozy or Virgin Frozen Strawberry Daiquiri Popsicles

Yes, from time to time, though on rare occasions, I do take to drinking. I am not a sloppy drinker. At least I don't think that I am. I don't slur my words, but I am very light on my feet, and burst out laughing hysterically only after a couple of sips. This past Mother's Day, I was thinking, hmm, strawberries?! They are in season. How lovely would it be if someone made me a strawberry daiquiri. Only thing, I was alone. Though this video that was texted to me by my husband made me happy on Mother's weekend alone, which made me think of this song.

Strawberries in season got me, naturally, thinking of pina coladas. The first cocktail I ever loved way back when in Israel. Then I fell out of love of the syrupy sweet concoction though I still do love coconut. Fast forward to America where I was introduced to frozen strawberry daiquiris. I had them often, virgin. I then graduated to margaritas and can even tell the difference between the quality of the tequilas. How smoothly they go down, not the names of the brands. Then my spirits knowledge came to a halt and stayed stagnant and limited from there on, but in all honesty I am a beer kinda girl altogether.
So in celebration of a belated Mother's Day and the strawberry season, I bring you virgin or boozy frozen strawberry Daiquiri Popsicles. I am also crazed for anything ice cream, popsicles and frozen desserts as you can see from the extensive collection below, though this is my first featured popsicle, speaking of virgin.

Boozy or Virgin Frozen Strawberry Daiquiri Popsicles
makes 10 virgin/12 boozy

1 lb fresh strawberries, hulled
Juice of 1 lime
1/2 cup rum (optional)

Simple syrup:
3/4 cup sugar
3/4 cup water

On low to medium heat, add the sugar and water into a small sauce pan. Let it heat up, mix and let the sugar completely dissolve. The process takes only a few minutes. Let the simple syrup cool down to room temperature.

Chop the strawberries roughly and add them into a blender or a food processor with the lime juice and simple syrup. Add the rum if you wish for a boozy version. Blend until smooth and pour into the popsicle molds. Freeze for at least four hours but ideally, overnight.

Read these great Epicurious tips for un-molding the popsicles. It can be tricky. Don't be tempted to keep it thawing too long.

Author's notes:
Size of popsicle molds vary so number of servings may vary accordingly. I also added simple syrup to the popsicle recipe to get the frozen in the daiquiris, and make them more icy, popsicle-like, than just frozen fruit. Alcohol doesn't freeze so consistency of boozy popsicles will be slightly different than the virgin ones.
